Curry on India :
It isn’t known as “Curry Land” for nothing…the tastes, aromas and sights are a foodie’s delight. It’s a potpourri of various cultures through the ages…blend to perfection. Just like Indian culture, food here has also been influenced by various civilizations. And, if you always thought Indian cuisine is synonymous with spicy and then some more…you wouldn’t be completely wrong. Spices are used rather generously in most of the cooking. But spicy isn’t just red hot chili peppers---though it could be a trial by fire if one is not careful while going through the menu. Every single spice used in Indian cooking has a specific use and carries a particular nutritional or medical property. But it’s not just all Tandoori tales and curry trails.
If you are ready to dig in, let’s start our culinary tour…
North Indian Food :
We’ll start with the tip of the country. Kashmiri cuisines reflect strong Central Asian influences. The main course comprises rice. Mutton is a key ingredient in most of the dishes here but vegetarians can take heart, one of the most delicious dishes this region boasts of is ‘Saag’ prepared with a green leafy vegetable known as the 'Hak'. And if you want to say it with flowers, there’s lotus stem items that’s a must eat. Further down, in Haryana and Uttar Pradesh it’s a veggies delight…with breads and more. Chapattis—fluffy soft bread baked or liberally smeared with butter is the staple food. They are prepared with a variety of flours such as wheat, rice, white flour etc.
Ask for: Tandoori, Rumaali, Kulcha and Naan…just take your pick.
And now for some lip lickin’ vegetarian and non-vegetarian feast that you can’t escape from wherever you are in India. If you’re calorie counting please do take a break and just work it out later. Punjabi recipe is prepared in delicious gravies and the people here believe in topping it up big time—be it the famous Patiala peg (explain) or sinful dollops of butter. If you are watching your weight, don’t worry--the dishes are simple, earthy and healthy.
Must have: Matar Paneer, Dal Makhani, Parathas, Bhature, Lassi…they are a rage across the length and breadth of India.
Food for the Kings…that’s Mughlai food for you. It’s gourmet fare…famous for the exotic use of spices, dried fruit and nuts. You’ve guessed it right; the Mughals did everything in style and splendor. But it’s a luxury one should savor at least once. Mughlai recipes are rich in carbohydrates and proteins. Kebabs and Biryanis and Dum-Pukht dishes (steamed over slow flame charcoal). Confused, well purists will cry blue murder but just to give you an idea, something like Kentucky fried chicken for the uninitiated…but miles ahead in texture, aroma and taste.
Must Have: Shammi Kebabs, Boti Kebabs, creamy Kormas, royal Murgh Mussalams and fragrant Biryanis.
West Indian Food :
Get ready to tickle your taste buds! In western India, the desert cuisine is famous for its unique taste of food. Rajasthan and Gujarat are the states that represent the desert flavor. The princely state of Rajasthan has a royal cuisine. The Maharajas went on frequent hunting expeditions and even today, Rajasthani princely feasts flaunt meat cuisines that are incomparable. But the vegetarian cooking in this region is also something to look forward to with its mouth-watering aromas. A variety of Dals (lentil curries) and Achaars (pickles/preserves) is used that substitutes the relative lack of fresh vegetables in Gujarat and Rajasthan. Rajasthan's tastiest curries are based on the use of pulses or gram flour. Dry fruits, spices and yogurt are used in many of the preparations. A vast array of savories and sun-dried snacks make sure that you are constantly nibbling away.
